Soupsbetween 125 and 250 quarts of fresh homemade soup are served daily, depending on the season. soup preparation begins at 6:30 each morning – slicing fresh mushrooms, sautéing garlic, trimming onions, chopping carrots, broccoli & celery, dicing potatoes, making roux, and all the other diverse and time-consuming tasks needed to have six or seven varieties of soup ready for lunch. some people think the stockpot should be a catch-all for the past week’s leftovers – we heartily disagree. we’ve always believed that superb soup comes from the finest ingredients available – fresh veggies, unsalted butter, extra virgin olive oil, real dairy products, etc. we’re justifiably proud of our soup; that’s why feed store soup has become known as “springfield’s best.”
